The amount of pecans in the ingredients below is a mere suggestion. I usually add a cup or more of chopped pecans for the pie filling an then do a design on the top of the pie with pecan halves. The design is very simple and it makes the finished pie look more interesting. You can see my usual design below in the dark, blurry picture.
For the crust, use Andrew's Pie Crust recipe.
In a large bowl, combine corn syrup, brown sugar, salt, butter, and vanilla; mix well. Add slightly beaten eggs and blend well; stir in pecans. Pour into the unbaked pie shell. Bake in a preheated 350° oven for 45 minutes, or until set. Cool pecan pie and serve with a dollop of whipped cream or vanilla ice cream.
